Raw Protein Bar

PictureMost of the time Husband and I are relatively healthy. We eat very little processed carbohydrates, a little organic animal products, a small amount of fruit and lots of vegetables, especially green. But all this healthy eating can be hard when you love baked goods as much as we do, so once in a while I make a raw protein bar that we have as a snack. They are supper yummy and travel well, plus you can flavour it with what ever you want, change up the nuts and fruit, use warm coconut oil instead of carob (or use organic dark chocolate!) and it's a totally different beast!

based on a recipe from mother-in-law
feel free to add real peanut butter, or almond butter or seed butter, this is more of look and see type recipe so you may have to adjust quanites, use as a guide only. 

2 cups dried fruit (may need a little more if your fruit is super dry)
1 cup mixed nuts (almonds, brazil, hazelnut, walnut, pinenut all good)
1 1/2 cups shredded coconut, mixed seeds (like linseed, sesame, pumpkin, sunflower etc.)
1 Small block of melted sugar free organic carob

Put nuts, seeds and fruit into a food processor and pulse till roughly chopped, add wet ingredients (nut butter, oil, melted carob) and pulse till it all comes together in a sort of ball.
Press down mixture into a glass or plastic dish lined with cling film.
Pop it into the fridge until hardened. Then slice and serve.
Will last for ages in the fridge (up to 2 weeks).
